A very blessed Eid  to  you and family,  to those celebrating.  May you be showered with joy and happiness!

This year am not making any heavy preparation since I had just recovered from my illness.  I picked up  agar agar powder to prepare this Broken Glass Jelly.

This is the simplest dessert you can make without much effort but still looks terrific.  What I did was mixing the agar agar powder with sugar in a deep pot  until the  agar agar is dissolved.  Bring to boil  over low heat, stirring  all the time.

And now this is a fun part.  Divide into 4 parts.  Mix 3 parts with your favorite color and leave the balance as it is.  Let them set , now you can cut the colored parts into cubes and place them in a  9 in tray.  Mix them altogether.

Heat the non colored part over low heat, add  milk.  Remove from heat, pour this mixture over the tray filled with colored cubes.  Cool slightly, place the tray in a refrigerator to set fully.

BROKEN GLASS JELLY

10 g  white agar agar powder
250 g white sugar
1 liter water
3 tablespoon condensed  milk
3 different color of food coloring

METHOD

1.  Dissolve agar agar powder in one liter of water, stir well.

2.  Add sugar, stir and bring to boil over low heat.

3.  Remove from heat, rinse 3 containers, place 1 1/4 cup of agar agar on each container, add coloring to each, stir until well mixed.  Chill in a refrigerator..

4.  Rinse  9  in tray, cut into cubes for the colored parts.  Place them in a tray, mix altogether.

5.  Heat the plain part, add the condensed   milk.  Remove and pour this over the colored cubes.

6.  Cool slightly and let it set in a refrigerator.  Cut into desired sizes to serve.

COCONUT CREAM AGAR / AGAR2 SANTAN

With the temperature rising, it's time for a refreshing dessert. made of agar agar.   This  low calorie agar2 is derived from  natural water soluble fiber with no fat or starch.

Coconut Cream Agar  is simple to prepare and much healthier than the egg and cream type. What you need is to stir the mixture of agar2 powder, sugar and coconut milk until boiling and thicken, pour into your favorite mould and once it comes to room temperature place them in a refrigerator to chill.

Beside coconut milk, you can add canned fruit, corn, cocoa or even fruit juice to the jelly, the choice is endless, just use your imagination to explore this versatile dessert.

ROTI BOYAN

Roti Boyan (Bawean) is a popular snack made with flaky pastry and stuffed with mashed potato.  It is a sort of cross between a samosa and empanada. It is most probably created by Baweanese  -  they are from an island in East Java, Indonesia.

It is either shaped into round or square, deep or shallow  fried  until crispy and golden. Roti Boyan  is usually found and sold at roadside stalls.

Like most pastry recipes, the quantity of liquid is very important so take care  to add the water gradually until a pliable dough is formed.

Another important factor, heat the oil  to the proper temperature and maintain it throughout the cooking process.   If it is not hot enough, it will soak up extra oil.

If you're  allergic to eggs, simply omit them but sprinkle some water to the mashed potato just to bind them.

Also sprinkle some salt when heating the oil.  I noticed  my Roti Boyan   does not absorb excess  oil.

SPICY CHICKEN NOODLE SOUP

Sometimes we love to skip our regular diet by having  various type of noodles, flat bread or even pasta. For today, I'm going to cook my favorite Chicken Noodle Soup.

My recipe was a bit different since I have added bird's eye chili,  to make it spicier and ground almond for slight nuttiness to the soup. This is the most loved chicken soup by my family.

Whenever I cooked any chicken dish, I make sure to remove the skin and excessive fat hidden in between the flesh. You can always ask the poultry seller to remove the skin and cut the chicken according to your requirement, how big you want it to be.

In addition of cooked noodle, you  can make this heavenly soup with pasta or rice cake (lontong) too. You can  control the spice of this Spicy Chicken Noodle Soup by adding more or less chili and also modify the vegetables  to your preference.

Instead of serving the chicken as it is, you can shred the chicken with your fingers as you pick it off the bone. Simply pull the meat apart into chunks.

Warm the belly and heart with  a big bowl of  Spicy Chicken  Noodle  Soup.  This endless  customized recipe is healthy addition to any meal or a great centerpiece  dish in its own right.

CHOCOLATE FUDGE SLICE

Who can resist Chocolate Fudge Slice? This recipe was foolproof and pretty darn simple - just basic ingredients and egg free. It's better than any fudge I've ever tried.

I used 11 x 7 in rectangle pan, lightly buttered. The Chocolate Fudge Slice was easy to cut and remove from the pan. It's chocolatey and sweet enough to satisfy my cravings.

Meanwhile, a lot of vegetarian cookery books rely heavily  on eggs, especially for cakes, pastries and pudding. These recipes can be replaced  and the following should provide some ideas.

Eggs are used to bind a dish, when whipped, may  also incorporate air  making a cake very light. Many recipes can be adapted using one of the suggestions below.

Instead of one egg, you can use::

1 medium  mashed banana
1/4 cup apple sauce or pureed fruit  (avocado, pumpkin, squash)
1 tablespoon ground  flax seed + 3 tablespoon of warm water. Let stand 5 minute before using
1/4 cup pureed tofu

Once a while we love to eat pasta especially a stir fried ones. We will devour any kind of  pasta  that is long and spicy. While we do have a typical pasta sometimes I mix things up with pasta from different countries. I make sure they have more fiber and other nutrients.

You can always use less chili paste for a  milder version.  Anyway, we like ours to be super spicy, in fact I had used bird's eye chili for this recipe.

This meal is delicious and ready in minutes.  Feel free to substitute any type of meat or vegetables to this dish or skip the meat altogether.

The intense lemon flavor and delicate texture of this Eggless  Lemon Tart make it a perfect ending for any meal. Made from scratch, the crust contains less fat than a regular recipe.

Since I really wanted something easy to make that was sweet and bursting with tangy  lemon flavors, I settled on this Eggless  Lemon Tart. It is also an egg free recipe for the filling as well as  for the pastry.

I tried it, my family tried it. We all agreed that it came out pretty darn tasty. It had zing. The only thing that it did not have was a lot of colors for that I have used one or two drops of yellow food coloring in the filling.

So this is my low fat and  Eggless Lemon Tart recipe. I hope you will enjoy it as much as we do.

This is a traditional kuih made of green bean flour, coconut milk and sugar. In the olden days, the flour has to be prepared from scratch but now it's easily obtainable from the supermarket or bakery outlet. Before cooking this tasty  Koleh Koleh ,  you have to prepare the coconut crumbs (tahi minyak), sugar syrup then only you can proceed in making this kuih.
